Parotta (or purota) is a layered flatbread that is cooked on a frying pan or a tawa (a flat disc shaped frying pan). The dough consists of maida/all purpose flour, egg, salt, sugar, oil, milk, and baking powder. The dough is cut into fine strips and is later formed into a spiral flatbread. It is extremely common in Southern Indian states like Tamil Nadu and Kerala. Because the names are so common, a parotta can be mistaken for a paratha. Parotta is mainly consumed in South India while paratha is consumed in North India. In addition to that, parottas have layers, meanwhile a paratha is flat and can be stuffed with fillings.

Dosas are thin crepes that are made out of fermented rice and lentil batter. You can prepare the batter by blending urad dal (black lentils) and rice. Once the batter is prepared, oil a flat grill and prepare the dosas by spreading the batter out into a thin circle. After that, you can stuff the dosas with whatever you desire. Common stuffings include potatoes, onions, and paneer. You can also enjoy a dosa with sambar (a lentil-based vegetable stew) or chutney (a savory condiment). Although dosas are mainly eaten all over India, they originated in the Udipi Town of Karnataka.

Appam is a famous Kerala breakfast dish made out of fermented rice and coconut milk. The mixture has to be prepared beforehand since it requires fermenting the batter and letting the yeast set. Appams are most commonly found in Tamil Nadu, Kerala, and Karnataka, but they can also be found in Sri Lanka. Because the batter is fairly simple, you can enjoy it with anything! It is most commonly enjoyed with sweet coconut milk. Resembling a bowl shaped pancake, appams will be the perfect breakfast or dinner item.

Thayir sadam, also known as curd rice, is a highly famous dish in Tamil Nadu. The main ingredients usually consist of curd, rice, and urad dal. It is best to use unsweetened curd instead of yogurt so that the consistency of the dish will be more put together. Curd rice is usually eaten with pomegranates, raw cucumber, onions, and pickle. You can enjoy thayir sadam by simply adding curd to rice with a bit of salt or adding mustard leaves, cumin, urad dal and spices of your choice to further enhance the dish.

Rasam is a South Indian soup that can be accompanied with a bowl of rice or it can be consumed as an immune boosting meal. The common ingredients needed to make this dish are jaggery, tamarind, tomatoes, and lentils of your choice. Rasam varies in types as there are tons of ingredients that can be added. For example, koli rasam is mainly made out of chicken while venkaaya rasam is mainly made out of onions. Rasam is the perfect dish to have when you’re sick as the spicy-sweet and sour stock will comfort you.
